Choc-nana muffins!

I love to bake! I also love to add my own creative flair to tried and tested recipes. So when I came across a banana muffin recipe which was already delicious, I knew I could add some extras to make it even more so!

Plus my kids have a habit of taking one bite of fruit then leaving it on the kitchen table, so I had an excess of half eaten bananas to use up!

Hope you enjoy this one as much as we did!


2 bananas
120g milk
60g honey
75 g melted butter or coconut oil
1 tsp vanilla extract
2 eggs
300g Self Raising Flour
2 tsp Ground cinnamon
Almonds to sprinkle
Shredded coconut to sprinkle

Natural Saffie

White chocolate to sprinkle.


I used a Thermomix recipe so the method is for TM users, however it could be very easily adapted without, simply hand-mash bananas and mix ingredients in as below.

1. Put the bananas into the TM and ‘mash’ on speed 4 for 6 secs.

2. Add in the milk, the melted butter, the honey, the vanilla extract and the eggs – mix on speed 5 for 5 secs.

3. Weigh in the flour and and cinnamon and mix on speed 3 for 5 secs to combine.
Pour the mixture into the paper cases and top with almonds, coconut and white chocolate pieces.

4. Bake in the oven for 20 mins at 180 degrees.

    Just made these needing to use up excess bananas & threw in some broken up Easter egg (need it gone!). Delicious, thank you x
