Creamy peanut stir fry!

You know those recipes you picked up somewhere but can’t quite remember where? Yeah this is one of them, and I know it has been chopped and changed so many times, but the basics are there and it doesn’t ever disappoint.

It’s also so quick and easy which are the two basic requirements I have when it comes to prepping dinner with kids hanging off your hips and tugging on your ankles.

So here it goes!

INGREDIENTS

1 can coconut cream
3 tablespoons peanut butter
1 tablespoon of ground ginger
1 tablespoon ground garlic
2 tablespoons sweet chilli sauce
Veggies of your choice- sliced for cooking

Chicken or beef sliced for frying (or if you really want to make it easy simply shred a BBQ chook)

METHOD

Heat a fry pan with oil of your choice.
Place the garlic and ginger in and fry off until aromatic.
In a separate container mix the peanut butter, sweet chilli sauce and coconut cream until combined.

Pour into the fry pan and heat.
Pop in your uncooked meat into the fry pan and allow to simmer.
Add vegetables and cook until tender.

Serve with rice or noodles and Enjoy!
