I literally had nothing in the fridge today for lunch. Just a handful of things that could possibly make something if I had enough energy for imagination!
Luckily I remembered an old recipe I used to make all of the time, I even though I didn’t have everything I needed, I had a few little extras I could substitute.
And guess what, it turned out to be even more delicious. So I had to share this recipe with you!
Here it is! Hopefully you’ll get a chance to whip these up and enjoy a lunch for you!
2 sheets of puff pastry
4 large eggs
Fresh or frozen (defrosted) spinach cubes. I used 4.
Half a block of feta (I use the smooth variety)
Half a cup of grated cheese of choice.
Dash of milk
Salt and pepper to season.
Preheat an oven to 200 degrees
Grate zucchini and set aside.
In a large bowl, whisk eggs and add in milk.
Mix in grated cheese, zucchini, spinach, feta and salt and pepper.
Cut puff pastry sheets into four squares and place one square in each large well greased muffin tin. I used left over pastry in a mini muffin tray to make the kids some smaller quiches.
Fill each pastry cup with mixture.
Place in oven and cook for 15 minutes or until mixture has set.
Leave to cool slightly before removing from muffin tray, and enjoy!
The mini versions of these quiches freeze beautifully, so make a load of them and pop away for a rainy day for the kids lunches. Told you, easy, peasy!
