Friday night dinners- Healthy Nachos

I’m bringing back the Friday Night Dinner posts! Hoorah you say. Or maybe that’s just me saying that? Either way, I hope to bring you some inspiration for quick and yummy dinners for the whole family.

Today it’s healthy nachos. Who doesn’t like those? Nobody!

Ingredients

1 onion, peeled and diced.
2 garlic cloves, finely chopped.
2 carrots, grated.
2 capsicums, roughly chopped
2 small zucchinis, grated.
10g oil
3 tablespoons taco seasoning
250g mince
200g tinned tomatoes
2 tablespoons of water.
Corn chips, cheese, avocado and sour cream to serve.

Method

Natural Saffie

Place oil in a frying pan and heat.
Add the onion and garlic and cook until softened.
Add in the mince and brown it off.
Once cooked through, add remaining veggies and tinned tomatoes.
Stir in taco seasoning and water and let simmer for 5 minutes.
In a baking dish, line corn chips and top with meat mixture.
Sprinkle cheese over the top and pop into a moderate oven (180 degrees) for 15 minutes.

Serve with avocado and sour cream.

It really doesn’t get any easier than that, does it? And the best part is, the entire family ate this meal. So that means it’s a winner in my book!

Of course, feel free to chop and change the veggies you add into the mix. You can basically pop whatever you have in the fridge, into the mixture. And experiment! Try making your own guacamole or salsa!
