I don’t know about you, but my favourite meal of the day is breakfast. The only problem with that is that by the time I’ve finished feeding the kids, I can’t be stuffed doing anything elaborate for myself.
This is where this amazing little bowl of goodness comes in.
It’s chock full of all of the good stuff, and it fills you up. Oh and it tastes so yummy. The best part about it, is it can be made the night before which is perfect for the breakfast circus!
Half an avocado
1/4 cup of greek yoghurt
1 cup of frozen berries
1/4 cup rolled oats
Fruit to top
Chia seeds to sprinkle
Shredded coconut to sprinkle
Place avocado, greek yoghurt, frozen berries, rolled outs into a blender or Thermomix and blend until smooth.
Pour mixture into a bowl.
Slice a banana and handful of strawberries and place on top of the mixture.
Sprinkle chia seeds and coconut on top and cover to set in the fridge overnight.
Enjoy! You deserve a delicious breakfast too!
